Hello, I'm Amanda Swan, Nutritional Therapy Practitioner (NTP), Western Herbalist, and dedicated yoga practitioner. I am also the creator, chef, and educator of The Awakened Table, a small scale, seasonal retreat catering and personal chef service. Since 2016, I have had the pleasure of serving delicious and wholesome weekly lunches to the folks at Coconut Bliss, as part of their corporate wellness program. In 2023 I transitioned to postnatal nutritional support for families and LOVE what I do.
I have worked on farms and in restaurants for the last 20 years. My creative medium is food art. Food is about community, and sharing the joy of the sensory experiences inspired by cooking and eating. I attribute my passion for food and cooking to my mom, “enchilada mama,” my creative inspiration to world travel… Peru, SE Asia, and the ongoing desire to learn more from hard-working farmers.
My education as a Nutritional Therapy Practitioner and Western Herbalist influences my cooking with the intention of food as medicine for our body and soul. I use lots of fresh herbs and spices to infuse flavor and health into the dishes. I use methods of long and slow cooking and soaking/sprouting grains and legumes to create nutrient-dense, digestable, and deeply nourishing meals. I am dedicated to supporting local farms and sourcing seasonal, organic ingredients whenever possible.
As a dedicated daily yoga practitioner and outdoor adventurer, I am connected to mindful cooking and eating that fuels and supports an ongoing practice.
